The Practice of Wine Tasting

Wine tasting (often, in wine circles, simply tasting) is the sensory examination and evaluation of wine. While the practice of wine tasting is as ancient as its production, a more formalized methodology has slowly become established from the 14th century onwards. Modern, professional wine tasters (such as sommeliers or buyers for retailers) use a constantly evolving formal terminology which is used to describe the range of perceived flavors, aromas and general characteristics of a wine. More informal, recreational tasting may use similar terminology, usually involving a much less analytical process for a more general, personal appreciation.

The results of the four recognized stages to wine tasting: appearance, “in glass” the aroma of the wine, “in mouth” sensations, “finish” (aftertaste) – are combined in order to establish the following properties of a wine: complexity and character, potential (suitability for aging or drinking), possible faults.

A wine’s overall quality assessment, based on this examination, follows further careful description and comparison with recognized standards, both with respect to other wines in its price range and according to known factors pertaining to the region or vintage; if it is typical of the region or diverges in style; if it uses certain wine-making techniques, such as barrel fermentation or malolactic fermentation, or any other remarkable or unusual characteristics.

Whereas wines are regularly tasted in isolation, a wine’s quality assessment is more objective when performed alongside several other wines, in what are known as tasting “flights”. Wines may be deliberately selected for their vintage (“horizontal” tasting) or proceed from a single winery (“vertical” tasting), to better compare vineyard and vintages, respectively. Alternatively, in order to promote an unbiased analysis, bottles and even glasses may be disguised in a “blind” tasting, to rule out any prejudicial awareness of either vintage or winery.

What Is Fortified Wine Actually?

Fortified wine is a wine to which a distilled spirit, usually brandy, is added. Many different styles of fortified wine have been developed, including Port, Sherry, Madeira, Marsala, Commandaria wine and the aromatized wine Vermouth. The original reason for fortifying wine was to preserve it, since ethanol is a natural antiseptic. Even though other preservation methods now exist, fortification continues to be used because the process can add distinct flavors to the finished product.

Although grape brandy is most commonly added to produce fortified wines, the additional alcohol may also be neutral spirit that has been distilled from grapes, grain, sugar beets, or sugarcane. Regional appellation laws may dictate the types of spirit that are permitted for fortification. The source of the additional alcohol and the method of its distillation can affect the flavor of the fortified wine. If neutral spirit is used, it will usually have been produced with a continuous still, rather than a pot still.

When added to wine before the fermentation process is complete, the alcohol in the distilled beverage kills the yeast and leaves residual sugar behind. The end result is a wine that is both sweeter and stronger, normally containing about 20% alcohol by volume (ABV). During the fermentation process, yeast cells in the must continue to convert sugar into alcohol until the must reaches an alcohol level of 16%–18%. At this level, the alcohol becomes toxic to the yeast and kills it. If fermentation is allowed to run to completion, the resulting wine will (in most cases) be low in sugar and will be considered a dry wine. The earlier in the fermentation process that alcohol is added, the sweeter the resulting wine will be. For drier fortified wine styles, such as sherry, the alcohol is added shortly before or after the end of the fermentation.

In the case of some fortified wine styles (such as late harvest and botrytized wines), a naturally high level of sugar will inhibit the yeast. This causes fermentation to stop before the wine can become dry.

Aging of Wine Does Matter

The aging of wine is potentially able to improve the quality of wine. This distinguishes wine from most other consumable goods. While wine is perishable and capable of deteriorating, complex chemical reactions involving a wine’s sugars, acids and phenolic compounds (such as tannins) can alter the aroma, color, mouthfeel and taste of the wine in a way that may be more pleasing to the taster. The ability of a wine to age is influenced by many factors including grape variety, vintage, viticultural practices, wine region and winemaking style. The condition that the wine is kept in after bottling can also influence how well a wine ages and may require significant time and financial investment. The quality of an aged wine depends significantly bottle-by-bottle, depending on the conditions under which it was stored, and the condition of the bottle and cork, and thus it is said that rather than good old vintages, there are good old bottles. There is a significant mystique around the aging of wine, as its chemistry was not understood for a long time, and old wines are often sold for extraordinary prices. However, the vast majority of wine is not aged, and even wine that is aged is rarely aged for long; it is estimated that 90% of wine is meant to be consumed within a year of production, and 99% of wine within 5 years.

There is a widespread misconception that wine always improves with age, or that wine improves with extended aging, or that aging potential is an indicator of good wine. Some authorities state that more wine is consumed too old than too young. Aging changes wine, but does not categorically improve it or worsen it. Fruitness deteriorates rapidly, decreasing markedly after only 6 months in the bottle. Due to the cost of storage, it is not economical to age cheap wines, but many varieties of wine do not benefit from aging, regardless of the quality. Experts vary on precise numbers, but typically state that only 5–10% of wine improve after 1 year, and only 1% of wine improves after 5–10 years.

In general, wines with a low pH (such as Pinot Noir and Sangiovese) have a greater capability of aging. With red wines, a high level of flavor compounds, such as phenolics (most notably tannins), will increase the likelihood that a wine will be able to age. Wines with high levels of phenols include Cabernet Sauvignon, Nebbiolo and Syrah. The white wines with the longest aging potential tend to be those with a high amount of extract and acidity. The acidity in white wines, acting as a preservative, has a role similar to that of tannins in red wines. The process of making white wines, which includes little to no skin contact, means that white wines have a significantly lower amount of phenolic compounds, though barrel fermentation and oak aging can impart some phenols. Similarly, the minimal skin contact with rosé wine limits their aging potential.

Vintages in Winemaking

Vintage, in winemaking, is the process of picking grapes and creating the finished product (see Harvest (wine)). A vintage wine is one made from grapes that were all, or primarily, grown and harvested in a single specified year. In certain wines, it can denote quality, as in Port wine, where Port houses make and declare vintage Port in their best years. From this tradition, a common, though incorrect, usage applies the term to any wine that is perceived to be particularly old or of a particularly high quality.

Most countries allow a vintage wine to include a portion of wine that is not from the year denoted on the label. In Chile and South Africa, the requirement is 75% same-year content for vintage-dated wine. In Australia, New Zealand, and the member states of the European Union, the requirement is 85%. In the United States, the requirement is 85%, unless the wine is designated with an AVA, (e.g., Napa Valley), in which case it is 95%. Technically, the 85% rule in the United States applies equally to imports, but there are obvious difficulties in enforcing the regulation.

The importance of vintage, however, is both varied and disputed. In wine produced on the colder limits of wine production, vintage is often very important, because some seasons will be much warmer and produce riper grapes and better wine. On the other hand, a poor growing season can lead to grapes low in sugar, which lowers the quality of the resulting wine. In many wine regions, especially in the New World, growing seasons are much more uniform. In dry regions, the systematic and controlled use of irrigation also contributes to uniform vintages. However, such wines are regularly labeled by vintage because of consumer demand.

Wines of superior vintages from prestigious producers and regions will often command much higher prices than those from average vintages. This is especially the case if wines are likely to improve further with some age in the bottle. Some wines are only labeled with a vintage in better-than-average years, to maintain their quality and reputation, while the vast majority of wines are produced to be drunk young and fresh. In such cases, a vintage is usually considered less important. However, it can serve to protect consumers against buying a wine that would not be expected to improve with age and could be past its best, such as with Beaujolais nouveau, a wine style made to be consumed within months of its bottling.

The importance of vintage may sometimes be exaggerated. For example, New York Times wine columnist Frank J. Prial declared the vintage chart to be dead, writing that “winemakers of the world have rendered the vintage chart obsolete” (Prial), and Bill Marsano wrote that “winemakers now have the technology and skills to make good and even very good wines in undistinguished years” (Marsano). James Laube of Wine Spectator has asserted that “even an average vintage can yield some grand wines” (Laube).

Roman Weil, co-chairman of the Oenonomy Society of the US and Professor at the University of Chicago, tested the controversial hypothesis that experienced wine drinkers “cannot distinguish in blind tastings the wine of years rated high from those of years rated low, or, if they can, they do not agree with the vintage chart’s preferences” (Weil).

Dr. Weil used wines ranging from four to 17 years beyond their vintage with 240 wine drinkers and found that the tasters could not distinguish between wines of good and bad vintages except for Bordeaux wines. Even when they could make a distinction, the match between the tasters’ individual assessments and the charts’ rankings were little better than tossing a coin. When the tests were replicated with wine experts, including French wine academics, the results were again the same as chance.

New World Wines in Industrial Age

Vine cuttings from the Cape of Good Hope were brought to the penal colony of New South Wales by Governor Phillip on the First Fleet (1788). An attempt at wine making from these first vines failed, but with perseverance, other settlers managed to successfully cultivate vines for winemaking, and Australian made wine was available for sale domestically by the 1820s. In 1822 Gregory Blaxland became the first person to export Australian wine, and was the first winemaker to win an overseas award. In 1830 vineyards were established in the Hunter Valley. In 1833 James Busby returned from France and Spain with a serious selection of grape varieties including most classic French grapes and a good selection of grapes for fortified wine production. Early Australian winemakers faced many difficulties, particularly due to the unfamiliar Australian climate. However they eventually achieved considerable success. “At the 1873 Vienna Exhibition the French judges, tasting blind, praised some wines from Victoria, but withdrew in protest when the provenance of the wine was revealed, on the grounds that wines of that quality must clearly be French.” Australian wines continued to win high honours in French competitions.

A Victorian Syrah (also called Shiraz) competing in the 1878 Paris Exhibition was likened to Château Margaux and “its taste completed its trinity of perfection.” One Australian wine won a gold medal “first class” at the 1882 Bordeaux International Exhibition and another won a gold medal “against the world” at the 1889 Paris International Exhibition.

Chilean wine begun to modernize in 1851 when Sylvestre Ochagavia imported cuttings of French varieties. Sylvestre Ochagavia is credited with introducing the varieaties Cabernet Sauvignon, Pinot noir, Cot, Merlot, Semillon and Riesling into Chile. Other wealthy wine growers followed suite. By the 1870s the wine industry was the most developed area of Chilean agriculture.

The region of Mendoza, or historically Cuyo, experienced an unprecedented wine-boom in the 19th century and early 20th century which turned it into the fifth wine growing area of the world and the first in Latin America. The establishment of the Buenos Aires-Mendoza railroad in 1885 ended the lengthy and costly trade with carts that connected these two regions of Argentina and sparked development of vineyards in Mendoza. Furthermore massive immigration to Río de La Plata mainly from Southern Europe increased demand and bought know-how to the old-fashioned Argentine wine industry. The vineyards of Mendoza totalled 1.000 ha in 1830 but grew to 45.000 in 1910, surpassing Chile which had during the 19th century had a larger areas planted with vines and a more modern industry. By 1910 around 80% of the area of Argentine vineyards were planted with French stock, mainly Malbec.

How We Got to Know About Wine

Archaeological evidence has established the earliest-known production of wine from fermenting grapes during the late Neolithic or early Chalcolithic in the Caucasus and the northern edge of the Middle East. An extensive gene-mapping project in 2006 analyzed the heritage of more than 110 modern grape cultivars, narrowing their origin to a region of Georgia. This matches the earliest discovered sites containing shards of wine-stained pottery, dated to c. 6000 BC in Georgia, and c. 5000 BC in Iran. The jars at the northwestern Iranian site already showed treatment with preservative turpentine pine resin, the flavoring of modern retsina. By c. 4500 BC, wine production had spread to Grecian Macedonia, the site of the first recovered crushed grapes, and an entire winery was discovered in 2011 inside the Areni-1 cave in Armenia, dated to c. 4100 BC. A 2003 report by archaeologists indicates a possibility that grapes were mixed with rice to produce mixed fermented beverages in China in the early years of the seventh millennium BC. Pottery jars from the Neolithic site of Jiahu, Henan, contained traces of tartaric acid and other organic compounds commonly found in wine. However, other fruits indigenous to the region, such as hawthorn, cannot be ruled out. If these beverages, which seem to be the precursors of rice wine, included grapes rather than other fruits, they would have been any of the several dozen indigenous wild species in China, rather than Vitis vinifera, which was introduced there some 6,000 years later.

The spread of wine culture westwards was most probably due to the Phoenicians who spread outward from a base of city-states along the Lebanese and Palestinian coast. The wines of Byblos were exported to Egypt during the Old Kingdom and then throughout the Mediterranean. Evidence includes two Phoenician shipwrecks from 750 BC discovered by Robert Ballard, whose cargo of wine was still intact. As the first great traders in wine (cherem), the Phoenicians seem to have protected it from oxidation with a layer of olive oil, followed by a seal of pinewood and resin, again similar to retsina.

Literary references to wine are abundant in Homer (8th century BC, but possibly relating earlier compositions), Alkman (7th century BC), and others. In ancient Egypt, six of 36 wine amphoras were found in the tomb of King Tutankhamun bearing the name “Kha’y”, a royal chief vintner. Five of these amphoras were designated as originating from the king’s personal estate, with the sixth from the estate of the royal house of Aten. Traces of wine have also been found in central Asian Xinjiang in modern-day China, dating from the second and first millennia BC.

Popularity and Backlash of Chardonnay

Due to the “malleability” of Chardonnay in winemaking and its ability to reflect its terroir, there is not one distinct universal “style” or set of constants that could be applied to Chardonnay made across the globe. According to Jancis Robinson, a sense of “smokiness” is one clue that could be picked up in a blind tasting of Chardonnay but there are many styles that do not have any “smokey” notes. Compared to other white wine grapes like Sauvignon blanc, Gewürztraminer and Viognier-Chardonnay has a more subtle and muted nose with no overwhelming aromatics that jump out of the wine glass. The identifying styles of Chardonnay are regionally based. For example, pineapple notes are more commonly associated with Chardonnay from Napa Valley while Chablis will have more notes of green apples. While many examples of Chardonnay can benefit from a few years of bottle aging, especially if they have high acidity, most Chardonnays are meant to be consumed in their youth. A notable exception to this is the most premium examples of Chablis and white Burgundies.

Chardonnay long had a reputation as one of France’s great white wines, but due to the dominance of geographical labeling, the fact that Chardonnay was the grape behind white Burgundy was not widely known by the wine-drinking public. The success of California and new world Chardonnays, partly encouraged by the Californian showing at the Judgment of Paris wine tasting, brought varietal wine labeling to more prominence and the easy to pronounce Chardonnay grape was one of the largest beneficiaries. In the late 1980s, a sort of “Chardonnay-mania” developed as wine regions (particularly new and developing ones) dramatically increased their planting of the grape to meet the world wide demand. Chardonnay became very fashionable in the 1990s, as the stereotypical drink of young urban women of the Bridget Jones generation.

But as more vineyards responded with massive new plantings of the variety, they found that fashions were changing again. The market was drinking more red wine, and there was a backlash against heavy, oaky, New World Chardonnays in favor of lighter wines such as Pinot grigio. There was a new fashion, “ABC” – Anything But Chardonnay, identified by Frank Prial in 1995. Another reason for the backlash was that Chardonnay was seen as a symbol of the globalization of wine, in which local grape varieties were grubbed up in favor of the big names demanded by international markets. Oz Clarke described a view of Chardonnay as “…the ruthless coloniser and destroyer of the world’s vineyards and the world’s palates.” The criticism was centered on the habits of winemakers to pull out or give up on local varieties in order to plant more Chardonnay which offered potentially more income but lack the uniqueness and character of local varieties. Examples of this occurred in south Italy and Spain when ancient Negroamaro, Primitivo, Grenache and Mataro vineyards were ripped up in favor of new Chardonnay plantings. Despite the backlash, Chardonnay remains very popular. In 2004 Chardonnay was estimated to be the world’s 6th most widely grown grape variety, covering 179,300 hectares (443,000 acres).

The Importance of Terroir

The influence of terroir means that wines from a particular region are unique, incapable of being reproduced outside that area, even if the grape variety and winemaking techniques are painstakingly duplicated. Winemakers in Burgundy do not believe that they are producing Pinot noir that happens to be grown in Burgundy, but that they are producing unique Burgundian wines that happen to be made from Pinot noir. Appellation systems, such as the French AOC systems, have developed around the concepts of “unique wines from a unique area”. These systems have also developed into protected designation of origin across the European Union so that, for example, winemakers from outside a region like Tuscany can not produce a Sangiovese wine and call it a Chianti. While the wine may be made from the same clonal variety of Sangiovese, in the same soil composition as found in the Chianti region with winemakers using the Tuscan method of production, there is an assumption that the two wines will be different due to terroir.

The names of these European wine regions are protected so that wines from different regions and different terroir are not confused with wines from that those regions – i.e. A Spanish or Australian “chianti”.

In the United States there is some confusion over the use of semi-generic names like Champagne and Port but there has been more effort by the American wine industry to recognize the unique association of place names with the wines produced in those places, such as the 2005 Napa Declaration on Place agreement. While appellation systems and the protected designations of origin can be a way of protecting “unique terroir”, the commercial importance of terroir has been a much debated topic in the wine industry.

The importance of terroir affects the price of the agricultural product as well as the products made from the product. Branding, variety, and farmer identification affects the price of a product. The Slow Food movement appreciates history of a variety of plant or animal, the story of the farmer who produced it, and ultimately the quality of the product. Chefs and bakers develop their own list of qualities they desire for their creations, and terroir affects these. Wine critics question the value of a Pinot noir wine from a Burgundy Grand Cru vineyard relative to a wine produced from the “lesser terroir” of a Premier Cru vineyard, and whether it merits the higher price. These doubts also arise when the quality of winemaking and other human influences are taken into account, which may be of a higher standard with the “lesser” premier cru.

These critics also question the difference between New World and Old World wine and whether modern winemaking techniques – like significant oak influences, over-ripened fruit, cultured yeast, micro-oxygenation, and color pigment additives – obscure or even eliminate the influence of terroir in making different regions unique. Critics often point to the homogenizing effect on mass-produced wines made from popular varietals like Chardonnay, which may have their terroir characteristics hidden by invasive and intensive winemaking. A heavily-oaked, over-ripe Chardonnay from California can taste very similar to the same style of wine from elsewhere. The marketability of wines from different regions and producers is affected by the importance accorded to terroir, both by the wine industry and consumer wine markets, with some producers downplaying terroir and its effect on their wines.

Dark & Light Skins

Burgundy wine (French: Bourgogne or vin de Bourgogne) is wine made in the Burgundy region in eastern France, in the valleys and slopes west of the Saône River, a tributary of the Rhône. The most famous wines produced here—those commonly referred to as “Burgundies”—are dry red wines made from Pinot noir grapes and white wines made from Chardonnay grapes. Red and white wines are also made from other grape varieties, such as Gamay and Aligoté, respectively. Small amounts of rosé and sparkling wines are also produced in the region. Chardonnay-dominated Chablis and Gamay-dominated Beaujolais are formally part of the Burgundy wine region, but wines from those subregions are usually referred to by their own names rather than as “Burgundy wines”. Burgundy has a higher number of appellations d’origine contrôlée (AOCs) than any other French region, and is often seen as the most terroir-conscious of the French wine regions. The various Burgundy AOCs are classified from carefully delineated Grand Cru vineyards down to more non-specific regional appellations. The practice of delineating vineyards by their terroir in Burgundy goes back to medieval times, when various monasteries played a key role in developing the Burgundy wine industry.

Burgundy is home to some of the most expensive wines in the world, including those of Domaine de la Romanée-Conti, Domaine Leroy, Henri Jayer, Emmanuel Rouget, Domaine Dugat-Py, Domaine Leflaive and Domaine Armand Rousseau

However, some top vintage first growth Bordeaux wines and a few iconic wines from the New World are more expensive than some Grand Cru class Burgundies.

Its renown goes back many centuries; in 1522 Erasmus wrote: “O happy Burgundy which merits being called the mother of men since she furnishes from her mammaries such a good milk” This was echoed by Shakespeare, who refers in King Lear to “the vines of France and milk of Burgundy”.

To accompany the finer wines, especially “the wines of the Cote [d’Or], it is recommended to taste some great cheeses like that of Citeaux, or ‘l’ami du Chambertin’ or ‘l’amour de Nuits'”. British wine critic Jancis Robinson emphasizes, “price is an extremely unreliable guide” and “what a wine sells for often has more to do with advertising hype and marketing decisions than the quality contained in the bottle.” While Grand Crus often command steep prices, village level wines from top producers can be found at quite reasonable prices. In 2010, the Burgundy region experienced a notable increase in internet coverage thanks to official efforts like the online broadcast of the famous Hospices de Beaune, as well as the efforts of independent wine aficionados, such as Bourgogne Live. Some burgundies are also increasingly valued as investment wines. Fans of Burgundy wine have been organizing events celebrating its virtues for decades. The most famous of these is La Paulée de Meursault.
