The ancient Romans planted vineyards near garrison towns so wine could be produced locally rather than shipped over long distances. Some of these areas are now world renowned for wine production. The Romans discovered that burning sulfur candles inside empty wine vessels keeps them fresh and free from a vinegar smell. In medieval Europe, the Roman Catholic Church supported wine because the clergy required it for the Mass. Monks in France made wine for years, aging it in caves. An old English recipe that survived in various forms until the 19th century calls for refining white wine from bastard—bad or tainted bastardo wine. The process of making wine in ancient Rome began immediately after the harvest with treading the grapes (often by foot), in a manner similar to the French pigeage. The juice thus expressed was the most highly prized and kept separate from what would later come from pressing the grape. This free-run juice was also believed to have the most beneficial medicinal properties.
Cato described the process of pressing as taking place in a special room that included an elevated concrete platform containing a shallow basin with raised curbs. The basin was shaped with gentle slopes that led to a runoff point. Horizontally across the basin were long, wooden beams whose front parts were attached by rope to a windlass. The crushed grapes were placed between the beams, with pressure applied by winding down the windlass. The pressed juice ran down between the beams and collect in the basin.
As the construction and use of a wine press was labor-intensive and expensive, its use was generally restricted to large estates, with smaller wineries relying on treading alone to obtain grape juice.
If grape pressing was used, an estate would press the skins one to three times. Since juice from later pressings would be coarser and more tannic, the third pressing normally made wine of low quality called lora. After pressing, the grape must was stored in large earthenware jars known as dolia. With a capacity of up to several thousand liters, these jars were often partially buried into the floors of a barn or warehouse. Fermentation took place in the dolium, lasting from two weeks to a month before the wine was removed and put in amphoras for storage. Small holes drilled into the top allowed the carbon dioxide gas to escape.
Burgundy wine (French: Bourgogne or vin de Bourgogne) is wine made in the Burgundy region in eastern France, in the valleys and slopes west of the Saône River, a tributary of the Rhône. The most famous wines produced here—those commonly referred to as “Burgundies”—are dry red wines made from Pinot noir grapes and white wines made from Chardonnay grapes. Red and white wines are also made from other grape varieties, such as Gamay and Aligoté, respectively. Small amounts of rosé and sparkling wines are also produced in the region. Chardonnay-dominated Chablis and Gamay-dominated Beaujolais are formally part of the Burgundy wine region, but wines from those subregions are usually referred to by their own names rather than as “Burgundy wines”. Burgundy has a higher number of appellations d’origine contrôlée (AOCs) than any other French region, and is often seen as the most terroir-conscious of the French wine regions. The various Burgundy AOCs are classified from carefully delineated Grand Cru vineyards down to more non-specific regional appellations. The practice of delineating vineyards by their terroir in Burgundy goes back to medieval times, when various monasteries played a key role in developing the Burgundy wine industry.
Burgundy is home to some of the most expensive wines in the world, including those of Domaine de la Romanée-Conti, Domaine Leroy, Henri Jayer, Emmanuel Rouget, Domaine Dugat-Py, Domaine Leflaive and Domaine Armand Rousseau
However, some top vintage first growth Bordeaux wines and a few iconic wines from the New World are more expensive than some Grand Cru class Burgundies.
Its renown goes back many centuries; in 1522 Erasmus wrote: “O happy Burgundy which merits being called the mother of men since she furnishes from her mammaries such a good milk” This was echoed by Shakespeare, who refers in King Lear to “the vines of France and milk of Burgundy”.

To accompany the finer wines, especially “the wines of the Cote [d’Or], it is recommended to taste some great cheeses like that of Citeaux, or ‘l’ami du Chambertin’ or ‘l’amour de Nuits'”. British wine critic Jancis Robinson emphasizes, “price is an extremely unreliable guide” and “what a wine sells for often has more to do with advertising hype and marketing decisions than the quality contained in the bottle.” While Grand Crus often command steep prices, village level wines from top producers can be found at quite reasonable prices. In 2010, the Burgundy region experienced a notable increase in internet coverage thanks to official efforts like the online broadcast of the famous Hospices de Beaune, as well as the efforts of independent wine aficionados, such as Bourgogne Live. Some burgundies are also increasingly valued as investment wines. Fans of Burgundy wine have been organizing events celebrating its virtues for decades. The most famous of these is La Paulée de Meursault.

Wine played an important role in ancient Egyptian ceremonial life. A thriving royal winemaking industry was established in the Nile Delta following the introduction of grape cultivation from the Levant to Egypt c. 3000 BC. The industry was most likely the result of trade between Egypt and Canaan during the early Bronze Age, commencing from at least the 27th-century BC Third Dynasty, the beginning of the Old Kingdom period. Winemaking scenes on tomb walls, and the offering lists that accompanied them, included wine that was definitely produced in the delta vinyards. By the end of the Old Kingdom, five distinct wines, probably all produced in the Delta, constituted a canonical set of provisions for the afterlife. Wine in ancient Egypt was predominantly red. Due to its resemblance to blood, much superstition surrounded wine-drinking in Egyptian culture. Shedeh, the most precious drink in ancient Egypt, is now known to have been a red wine and not fermented from pomegranates as previously thought.

Plutarch’s Moralia relates that, prior to Psammetichus I, the pharaohs did not drink wine nor offer it to the gods “thinking it to be the blood of those who had once battled against the gods and from whom, when they had fallen and had become commingled with the earth, they believed vines to have sprung”. This was considered to be the reason why drunkenness “drives men out of their senses and crazes them, inasmuch as they are then filled with the blood of their forbears”.

Residue from five clay amphoras in Tutankhamun’s tomb, however, have been shown to be that of white wine, so it was at least available to the Egyptians through trade if not produced domestically.
Much of modern wine culture derives from the practices of the ancient Greeks. The vine preceded both the Minoan and Mycenaean cultures. Many of the grapes grown in modern Greece are grown there exclusively and are similar or identical to the varieties grown in ancient times. Indeed, the most popular modern Greek wine, a strongly aromatic white called retsina, is thought to be a carryover from the ancient practice of lining the wine jugs with tree resin, imparting a distinct flavor to the drink. The “Feast of the Wine” (Me-tu-wo Ne-wo) was a festival in Mycenaean Greece celebrating the “Month of the New Wine”. Several ancient sources, such as the Roman Pliny the Elder, describe the ancient Greek method of using partly dehydrated gypsum before fermentation and some type of lime after, in order to reduce the acidity of the wine. The Greek Theophrastus provides the oldest known description of this aspect of Greek winemaking.

In Homeric mythology, wine is usually served in “mixing bowls” rather than consumed in an undiluted state. Dionysus, the Greek god of revelry and wine—frequently referred to in the works of Homer and Aesop—was sometimes given the epithet Acratophorus, “giver of unmixed wine”. Homer frequently refers to the “wine-dark sea” (οἶνωψ πόντος, oīnōps póntos): under the intensely blue Greek sky, the Aegean Sea as seen from aboard a boat can appear deep purple. The earliest reference to a named wine is from the 7th-century BC lyrical poet Alcman, who praises Dénthis, a wine from the western foothills of Mount Taygetus in Messenia, as anthosmías (“flowery-scented”).

Chian was credited as the first red wine, although it was known to the Greeks as “black wine”. Coan was mixed with sea water and famously salty; Pramnian or Lesbian wine was a famous export as well. Aristotle mentions Lemnian wine, which was probably the same as the modern-day Lemnió varietal, a red wine with a bouquet of oregano and thyme. If so, this makes Lemnió the oldest known varietal still in cultivation.
For Greece, alcohol such as wine had not fully developed into the rich ‘cash crop’ that it would eventually become toward the peak of its reign. However, as the emphasis of viticulture increased with economic demand so did the consumption of alcohol during the years to come. The Greeks embraced the production aspect as a way to expand and create economic growth throughout the region. Greek wine was widely known and exported throughout the Mediterranean, as amphoras with Greek styling and art have been found throughout the area. The Greeks may have even been involved in the first appearance of wine in ancient Egypt. They introduced the V. vinifera vine to and made wine in their numerous colonies in modern-day Italy, Sicily, southern France, and Spain.
